Makar Sankranti, observed with enthusiasm in states like Gujarat, Maharashtra, and Karnataka, marks the transition of the sun into the zodiac sign of Capricorn. It is a time of joy and festivities, as people come together to fly colorful kites, take holy dips in rivers, and offer prayers to the sun god for a prosperous harvest. Sweet rice dishes made from freshly harvested crops are an essential part of the celebrations.


Pongal, celebrated predominantly in Tamil Nadu, is a four-day harvest festival dedicated to honoring the sun god and expressing thankfulness for the abundance of nature. The highlight of Pongal is the preparation of the traditional dish "Pongal," a delectable mixture of rice, lentils, jaggery, and spices, cooked in clay pots to symbolize prosperity and well-being.


Lohri, fervently celebrated in Punjab, marks the end of the winter season and the arrival of longer days. It is a time for bonfires, folk songs, and dance. People come together to celebrate the harvest by offering rice-based delicacies like "Makki ki Roti" (cornbread) and "Sarson da Saag" (mustard greens) to the bonfire.


Bhogali Bihu, a major festival in Assam, celebrates the harvest and marks the end of the harvesting season. The celebration involves feasting on rice-based delicacies, traditional dance performances like Bihu, and lighting of bonfires. Rice plays a central role in the festivities, symbolizing prosperity and abundance.
